English

A PRISMA 2020 systematic review of 34 studies on commercial cloud kitchens. LPG open burners convert only 32-55% of fuel energy to useful heat, while high-frequency induction hobs transfer 84-90% directly to cookware. Induction shortens cooking time by up to 50%, uses ~0.70 kWh/meal versus 1.65 kWh for gas, and cuts lifecycle GHG emissions 25-40%. Provides a measurable evidence base for lower-energy, lower-carbon kitchen design.

📝 gxceed 編集解説 — Why this matters

In the global GX context

Kitchen electrification sits at the intersection of Scope 1 combustion and Scope 3 purchased energy, relevant to ISSB/CSRD disclosure and corporate transition plans. The quantified induction-vs-gas comparison gives operators a defensible basis for electrification capex decisions and emissions-factor selection in food-service value chains.

📄 Abstract(原文)

Commercial cloud kitchens have expanded rapidly as decentralised, delivery-only production facilities that concentrate large volumes of cooking into compact industrial spaces. This growth has sharpened a familiar engineering problem: kitchens that cook over liquid petroleum gas (LPG) open burners convert only 32 to 55 percent of their fuel energy into useful cookware heat, while the rest escapes into the room as wasted warmth that ventilation and air conditioning must then remove. This systematic review, conducted in accordance with the PRISMA 2020 statement, searched Scopus, Web of Science, and Google Scholar for peer-reviewed empirical studies, including laboratory thermodynamic experiments, industrial energy audits, and lifecycle assessment records. Thirty-four studies met the eligibility criteria. The pooled data show that high-frequency induction hobs transfer 84 to 90 percent of their energy directly into ferromagnetic cookware, shorten cooking time blocks by up to 50 percent, use roughly 0.70 kWh per meal compared with 1.65 kWh per meal for gas equivalents, and cut lifecycle greenhouse gas emissions by 25 to 40 percent relative to direct LPG combustion. Taken together, these findings offer designers and operators a clear, measurable evidence base for building lower-energy, lower-carbon commercial kitchens.
