This pilot study evaluates the carbon footprint associated with the dietary habits of a cohort of food science students in Romania using a specialized Digital Food Sustainability Tool (FST). Dietary patterns, including the consumption frequency of various food categories (meat, dairy, plant-based products), were recorded and converted into greenhouse gas equivalents (CO₂-eq). The results indicate that while food science students possess a higher theoretical awareness of sustainability, their actual dietary emissions vary significantly based on individual preferences, with high-meat diets contributing the most to the carbon footprint. The study underscores the utility of digital tracking tools in transforming consumer behavior and recommends integrating practical sustainability metrics into higher education curricula to foster eco-conscious dietary shifts.
